My temperature gauge bounces up and down rapidly, rather than providing a steady reading. Has anyone else experienced this?

The wire at the thermostat housing can be very fragile, move it and see if that has any effect, also, crimp the spade terminal a bit tighter.

Flaky gages were a common item on 2002s which have much the same electricals. The fault was found to be a bad instrument cluster ground and fortunately (for 2002 owners) the instrument cluster is pretty easy to remove. On your coupe, if this is the problem, it's a good deal harder to get the cluster out. DAMHIK, but I have big hands.

If your temperature bounces up and down I would self-quarantine for 14 days and seek medical help :).
Seriously, sounds like flaky ground as many have said before.
