Simple question but all my HVAC stuff is in boxes. With the A/C unit on the E9s being kinda an afterthought, is it possible to direct dehumidified A/C air to the defrosters or not?

I'm thinking not, but I could be wrong.

AC will dry the air out so eventually it should defrost the windows if you have both heat and AC on.

Theoretically, yes, if the “vent” lever is thrown open, some chilled air can go back through the heater box and then out through the defrost vents or the floor vents. But it’s so little air that when I’ve tried to figure this out myself I could barely feel anything coming out at all. It’s bound to be warmed up by the heater core at that point also.

There is no way for the heater and AC fans to both operate at the same time.

The heater fan shut-off relay can easily be defeated and both blowers be allowed to blow. I just don't know what the airflow path is like and if that would help. Take a look and see if it would.
